The easiest nice cream yet!
I’m pretty sure that this is the simplest flavoured nice cream one could make. But don’t let the recipe fool you, this vanilla nice cream is fluffy, creamy and has a distinct flavour. If you enjoy vanilla, this one’s for you.
What I find really interesting about this recipe is the way the vanilla changes the texture of the banana. After blending for a minute or so, it’s a pretty standard result. The banana chunks start breaking down, and streaks of vanilla essence make the mixture appear quite dark. However, after further blending, when the essence is fully incorporated into the nice cream, the mixture feels light and airy, and the colour is much lighter than at the start. Therein lies the beauty of it all!
We like to pair this nice cream with our date caramel, which compliments and accentuates the flavour. As an added bonus, we usually top our bowls with some seasonal fruit for colour and variation. Another fun idea is to create a layered nice cream treat, by combining your vanilla nice cream with whichever other flavours tickle your fancy.
And because this is a fruit-only kind of dish (with the exception of the almond milk), we find it to be a fun and filling breakfast option.

- 1/8 cup unsweetened almond milk
- 2 tsp vanilla essence
